Butternut and Coriander Soup

Make this heart-healthy Butternut and Coriander Soup for the whole family in just 40 minutes

INGREDIENTS

  • 1.5kg butternut, cubed
  • 3 onions, chopped
  • olive or avocado oil, for frying
  • 2 green apples, cored and diced
  • 30ml curry powder
  • 750ml milk
  • zest and juice of 2 oranges
  • 30ml sugar
  • handful coriander, chopped

METHOD

  1. Preheat oven to 220°C. Spread the butternut and onions on a baking tray. Sprinkle with oil and roast for about 30 minutes until cooked. Mix in the apples and curry powder. Season.
  2. Blitz the roasted veg, milk, orange zest and juice and sugar together. Season and add the coriander.
  3. Serve with crusty bread.
