Masterchef winner shares her scrumptious hot cross bun recipe

HOT cross buns are traditionally eaten on Good Friday, but here, in South Africa, they are made all year round.

There’s just something moreish about the hot, fluffy and fragrant buns.

We spoke to Masterchef South Africa Season 3 winner, Roxi Wardman, who shared her mixed-berry and dark-choc hot cross buns.

Mixed-berry and dark-choc hot cross buns


Ingredients

2 eggs
50g sugar
½ tablespoons salt
1 cup milk
10g instant yeast
170g butter
560g flour
1 cup chopped dark chocolate
1 ½ cups mixed berries
1 tablespoon mixed spice
1 tablespoon cinnamon
50g flour
25g water

Method

1. Whisk together eggs and sugar.
2. Heat milk until it is lukewarm (not too hot), mix in yeast and stir to combine.
3. Add milk to egg mixture, and whisk well.
4. Add melted butter and whisk well.
5. Add half of flour and salt, and whisk to combine.
6. Add remaining flour and start to knead your dough until silky smooth.
7. Add spices, mixed berries and chocolate and knead to combine.
8. Cover bowl and allow to double in size.
9. While dough is rising, in a bowl, mix flour and water together well to form a paste.
10. Once it has risen, take out the dough and divide it into 9 equal balls. Place in a lined baking tin, with the balls just touching each other.
11. Allow to rise until doubled in size.
12. Pipe flour and water mixture on the buns to form the crosses.
13. Bake in a 180°C preheated oven for 45min or until the tops are golden brown.
14. Once out, you can glaze your buns with a water-and-sugar syrup.
