Roxi cooked different meals using microgreens, which are small leafy vegetables similar to sprouts and are packed with health benefits. Jamie Clinton from Chicken Graphics, who facilitated the event for MicroThumbs for their new microgreens pesto, said Roxi prepared different meals on the spot using pea-shoot pesto, and everyone, including the children, ate every single bite.

She cooked a sweetcorn-fritter benedict, tuna-pesto noodle salad, canapé savoury choux bun and the delicious, fresh pesto, orange and chilly marinade for the sirloin steak. For children, she made beetroot brownies and basil macaroni and cheese balls.

“It was no easy task as we asked for a sweet and then a savoury children’s dish using our healthy microgreens, and then a marinade for steak and four different meals, all using our pea-shoot pesto,” said Clinton.

She said the event ran smoothly because of the hard work that was involved, and everyone had a good time.

“This would not have been possible without amazing people getting involved and helping. Teamwork really does make the dream work. Special thanks to Jono and Liesel, Kate and Connor Palmer, Chanel Geldenhuys, Shaun Callaghan, Diwané Van Den Berg, Debbie Upton, Gerhardus van den Bergh, Jolene Britton and every staff member at 305 – thank you for all you did and for getting involved,” she said.
