RECIPE: Home-made chicken meatballs

Ingredients 

  • 2 t lemon juice
  • 800 g chicken breasts
  • 2 t garlic
  • 100 g bread crumbs
  • handful chopped thyme
  • 2 t olive oil
  • Pinch of salt and pepper

 

Directions

  1. In a large bowl mix all the ingredients except the chicken breasts.
  2. Place the chicken in a food processor and chop till it resembles mince.
  3. Place the chicken mince in a bowl together with the mixture.
  4. Blend together till well mixed.
  5. Make balls of any size, fry on medium heat until brown and well cooked.
  6. For a healthier option, these can be baked in the oven.
