Salad recipe: Indulge in the nutritious and delicious combo beetroot, butternut and feta

Combine the wonderful flavours of beetroot, butternut and feta while reaping the many health benefits the veges offer, through the creation of this one-of-a-kind salad.

This beetroot, butternut and feta concoction has combined the best of the best, that’s definitely stepped up the salad game from the usual sideline-greens.

This recipe, by Stick a Fork in Me, I’m Dunne explained that butternut can be substituted with orange sweet potato.

Method to the magic

  1. Preheat oven to 200° C
  2. Rub some olive oil, salt and pepper and a little balsamic reduction all over the beets then wrap them individually in aluminium foil and cook in the oven until soft. Allow to cool, then chop into chunks.
  3. Peel and cut the butternut (and or sweet potato) into bite-size pieces. Mix with olive oil, salt and pepper and thyme and cook in the oven until tender.
  4. To serve, place the baby spinach on a platter and scatter the butternut on top. Place the beetroot on top of the butternut and scatter the feta cheese and pumpkin seeds over the salad.
  5. Drizzle with balsamic reduction just before serving
