Be creative with beetroot

Beetroot balls are a good way to get your family to eat healthier

If your children refuse to eat beetroot and they cause a scene about it, don’t get mad – get creative.
Ensure your children eat their veggies without them realising they are, with this unique and tasty way of turning the beetroot into beetroot balls.

The recipe created by Mandy Sacher on website kidspot.com shows a clever way to disguise beetroot, which is a rich source of vitamin C, fibre and cancer-fighting phytonutrients.
She used:

1 cup dates (chopped)
1/4 cup beetroot (finely grated)
1/4 cup spinach (chopped, finely sliced)
1 1/4 cup almond meal
1 cup shredded coconut
2 tbs chia seeds
1/3 cup coconut sugar (*optional)
1/2 cup shredded coconut (*optional)
