RECIPE: Impress your family with traditional tripe dish

Planning on trying something different for your family, well try this scrumptious SA dish is easy to make and very tasty.

Prep time: 3 hrs

Cooking time: 4 hrs

Serve: 6 people

Ingredients

  • 2 kg tripe, cleaned and cubed
  • 30ml olive oil
  • 1 onion, peeled and finely chopped
  • 1 chillies, chopped
  • 1 red pepper, finely chopped
  • 1 green pepper, finely chopped
  • 15 ml medium curry powder
  • 5 ml barbeque spice
  • 3 tomatoes, peeled and chopped
  • 1 stock cube
  • 30 ml tomato paste
  • 30ml mutton soup
  • 3 potatoes, peeled and cubed
  • 1 pinch of salt

Method

  1. In a large saucepan, add cubed tripe, 1 lt water, 1 pinch of salt and boil for 3 hours.
  2. Once tender and soft drain all the water and leave just a little for flavour, remove from the pot.
  3. In a clean separate sauce pan, heat oil and fry onion, pepper, curry powder and barbecue spice. Fry, stirring until golden brown.
  4. Add chopped tomatoes, potatoes, stock cube, tomato paste and the tripe, add 1 cup of warm water.
  5. Stir well and allow to simmer for 30 minutes
  6. Add the mutton soup and stir well until the meat is well blended with the vegetables and the soup, leave to boil for 5 minutes and serve.
