THERE is nothing more satisfying than a big bowl of soup. Especially on a col day
Try this delicious spicy tomato soup for lunch or supper
Serves 4
Ingredients:
* 2 bags tomatoes, halved and quartered
* 1 small fennel, finely chopped
* 6 garlic cloves, finely chopped
* 1 carrot, peeled and finely chopped
* 2 tsp dried chilli flakes, crushed (optional)
* 3 tbsp extra-virgin olive oil
* 1 tbsp extra-virgin olive oil, for serving
* 1 pinch salt
Method:
* Preheat oven to 200°C.
* Toss all ingredients together, except balsamic vinegar and basil, and season.
* Bake for 30 minutes in a covered roasting dish.
* Uncover and roast for a further half hour.
* Blitz to desired consistency.
*Serve with a splash of balsamic vinegar and a drizzle of olive oil and scatter with basil.
For serving:
Balsamic vinegar.
Basil, for garnish.
