RECIPE: Prepare your snoek differently

Tried and tested by Pamela Mkhungo.

Ingredients 

  • 2 kg cleaned snoek,
  • 15 ml spice
  • 125g melted margarine
  • 50 ml sweet chilli sauce (any sauce)
  • 2 garlic cloves, finely chopped
  • 10 ml chilli flakes
  • 1 lemon zest
  • salt and pepper
  • 1 lemon sliced
  • 35 ml olive oil

 

Directions

  1. Make a fire.
  2. In a small bowl, combine coriander chilli flakes, lemon juice, garlic, salt and pepper
  3. Dry the snoek with a paper towel, brush the fish with the mixture
  4. Season with the spice
  5. Place the lemon slices all over the fish
  6. Brush with olive oil,
  7. Braai the fish for 10 minute on both side, while brushing with flavoured butter
  8. Use a big fork to turn the fish upside down
