RECIPE: Spicy tomato soup

To enjoy on a cold day.

THERE is nothing more satisfying than a big bowl of soup.

Spicy tomato soup

Serves 4

Ingredients:

  • 2 bags tomatoes, halved and quartered
  • 1 small fennel, finely chopped
  • 6 garlic cloves, finely chopped
  • 1 carrot, peeled and finely chopped
  • 2 tsp dried chilli flakes, crushed (optional)
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp extra-virgin olive oil, for serving
  • 1 pinch salt

Method:

  1. Preheat oven to 200°C.
  2. Toss all ingredients together, except balsamic vinegar and basil, and season.
  3. Bake for 30 minutes in a covered roasting dish.
  4. Uncover and roast for a further half hour.
  5. Blitz to desired consistency.
  6. Serve with a splash of balsamic vinegar and a drizzle of olive oil and scatter with basil.

For serving:

Balsamic vinegar.

Basil, for garnish.
