THERE is nothing more satisfying than a big bowl of soup.
Spicy tomato soup
Serves 4
Ingredients:
- 2 bags tomatoes, halved and quartered
- 1 small fennel, finely chopped
- 6 garlic cloves, finely chopped
- 1 carrot, peeled and finely chopped
- 2 tsp dried chilli flakes, crushed (optional)
- 3 tbsp extra-virgin olive oil
- 1 tbsp extra-virgin olive oil, for serving
- 1 pinch salt
Method:
- Preheat oven to 200°C.
- Toss all ingredients together, except balsamic vinegar and basil, and season.
- Bake for 30 minutes in a covered roasting dish.
- Uncover and roast for a further half hour.
- Blitz to desired consistency.
- Serve with a splash of balsamic vinegar and a drizzle of olive oil and scatter with basil.
For serving:
Balsamic vinegar.
Basil, for garnish.
