What’s for dinner? Banting spaghetti Bolognese

If you are watching your carb intake, this delicious cottage cheese banting spaghetti Bolognese dish is for you. It delivers all the flavour your family will love, but without the excess carbs.

Serves 4 

You’ll need: 30ml olive oil; 1 onion, chopped; 1 clove of garlic, crushed; 500g beef mince; 115g tomato paste; 125ml water; 250g Lancewood Lactose-Free Low Fat Plain Smooth Cottage Cheese or Lancewood Low Fat Plain Cottage Cheese; 15ml fresh basil, chopped or 5ml dried basil; 15ml fresh oregano, chopped or 5ml dried oregano; salt and freshly ground black pepper to taste

To serve – 250g baby marrow spaghetti or 250g spaghetti cooked according to the instructions on the packet

How to:

Heat the oil and fry the onion and garlic until golden and soft. Add the mince and fry until lightly browned.

Add the tomato paste and water. Stir in the cottage cheese, basil, oregano and seasoning.

Simmer over low heat until most of the liquid has cooked away.

To serve:

Serve on top of the spaghetti of your choice (zucchini or cauliflower noodles).

Hints & tips:

For the crumbliest mince – use a whisk to break up mince when frying.
