What’s for dinner? Chicken Chakalaka

Tuck into this easy and budget-friendly meal you can whip up in a jiffy. You probably have most of the ingredients anyway!

Serves 6

You’ll need: 1kg chicken pieces; salt; black pepper; 15ml oil; 30ml cornflour; 1 can (290g) Nestlé Dessert & Cooking Cream; 2 cans (410g) Chakalaka; 80ml mayonnaise; 15ml brown sugar; 150ml chicken stock; lime wedges; coriander; rice for serving.

How to: 

Preheat the oven to 180˚C. Season the chicken pieces with salt and pepper and heat the oil in a pan. Sear the chicken for 2-3 minutes per side. Transfer the chicken to a greased ovenproof dish.

Mix the cornflour and dessert & cooking cream together in a bowl until smooth. Stir in the remaining ingredients and pour the mixture over the chicken. Bake for 40-45 minutes or until the chicken is tender.

Serve with fresh coriander, lime wedges and fluffy rice.
