What’s for dinner? Lemon and herb chicken pan

This lemon and herb chicken pan is the easiest, tastiest meal you can make! Just a few simple ingredients tossed together with farm-fresh country crop and into the oven for a no-fuss weekday family meal.

Serves 4 – 5

You’ll need: McCain Country Crop; 1,5kg chicken thighs, bone-in, skin-on; 3 teaspoons paprika; olive oil; juice of one large lemon; 3 teaspoons crushed garlic; 3 tablespoons Italian herbs; salt and pepper to taste.

How to: 

Preheat the oven to 200°C.

Season the chicken with salt, pepper and paprika and set aside.

In a jug combine the oil, lemon juice, garlic, Italian herbs and salt and pepper.

Place the chicken in a large oven tray and bake for 20 minutes.

Meanwhile, combine the McCain Country Crop with the marinade and keep it aside.

Remove the chicken from the oven and to the pan add the marinated veg.

Bake for a further 25 minutes until the veggies and chicken is cooked through.
