Hassle-free Hasselback potatoes

Don’t be a couch potato this Easter season – rather prepare a fantastic potato recipe that will make everyone coming back for seconds.

HTA School of Culinary Art chef, Given Nefumembe, thinks these Hasselback potatoes will the perfect addition to your Christmas plate. They are simple to prepare and you won’t have to spend too much time in the kitchen making them.

Try them out, here is a simple-to-follow recipe.

Ingredients

  • 2kg baby potatoes
  • 60ml olive oil
  • 10ml thyme
  • Salt and pepper

Method

1. Preheat the oven to 200°C.

2. Wash and dry potatoes then place them on a cutting board, place one potato at a time between two chopsticks, this will prevent you from slicing all the way through. With a very sharp knife, slice until the knife reaches the chopsticks. Repeat the process creating thin slices all the way down the length of the potatoes.

3. Arrange potatoes in a baking tray, drizzle half of the olive oil, chopped thyme, and season with a generous quantity of salt and pepper then roast for 20 minutes.

4. Remove from the oven and brush with the remaining oil and roast for another 20 minutes until the slices are opening up and the edges are crispy and the middle of the potato is tender.
