Warwick’s Women’s Day recipe

JOHANNESBURG – Here is a recipe to celebrate the special woman in your life with a delicious warm winter meal.

Warwick Wine Estate in Stellenbosch wants you to celebrate the amazing ladies in your life, as it celebrates its own matriarch, Norma Ratcliffe, the First Lady of South African wine who started making wine in 1984 a time when winemaking was a male-dominated industry.

Success was the only option for this pioneer woman, and now, 30 vintages later, Warwick stands out as one of the finest producers of iconic wines in the country.

For Women’s Day, the wine estate wants to share its Camembert Cheese and Cherries Parcel recipe to prepare for all the amazing women in your life.

For this recipe you will need:

  • 200g of frozen cranberries
  • 80ml of granulated sugar
  • Two 125g wheels of Camembert cheese
  • Six sheets of ready-made phyllo pastry
  • 100g of melted butter.

Method:

  • Preheat the oven to 180 degrees
  • Mix the frozen cranberries with the sugar and set aside to thaw together
  • Brush a layer of phyllo pastry with butter and then place another layer on top, then repeat with one more layer of pastry
  • Place a wheel of Camembert into the centre of the pastry and spoon about three to four tablespoons of the cranberry mixture onto the cheese and bring the pastry up around the cheese and cranberry mixture and twist gently to form a parcel
  • Repeat with the remaining pastry and Camembert.
  • Generously brush all of the phyllo pastry with melted butter including the pastry twisted on top.
  • Bake for 20 to 30 minutes or until the pastry is lightly golden and crisp.
  • Serve immediately with crackers.
