½ cup fresh lime juice 2 Tbsp freshly grated ginger 3 garlic cloves, crushed ½ red chilli, finely chopped 1 Tbsp honey 2 Tbsp water ½ cup olive oil ½ cup soy sauce (optional) ½ cup fresh coriander, chopped (optional)

Method

In a glass jar, combine the ginger, garlic, chilli, olive oil, lime juice, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator.

1 Tbsp fresh grated ginger 2 cups water 1 Tbsp honey ½ lemon, juiced

Method

Infuse the ginger by bringing the water to a boil in a saucepan. Add the ginger and turn off heat. Put the lid on it and let it steep for 10 minutes. If you are using a teapot, add the ginger in the teapot and pour boiling water in it. Let it steep for about 10 minutes. Strain to remove the ginger. Add fresh lemon juice and some honey if you like. Stir and enjoy! If you want an iced tea, let your tea cool down, store it in the fridge and add ice cubes before serving.
