PARKHURST – A new four-week basic cooking course will begin at Parkhurst Recreation Centre in August.

Economical, easy-to-prepare winter dishes have been included in the hands-on course, and students can take home everything they prepare.

According to course leader Dawn Carter, various aspects of basic cooking theory will be covered during the course.

“We will look at topics like the correct preparation of sauces, the correct storage of different foods, working with poultry, handling red meat, and the importance of measuring,” she said.

In week one, students will learn how to prepare dishes like lemony chicken and vegetable pie and traditional tomato bredie.

In week two, students can look forward to cooking Hungarian chicken with mash, and creamy seafood soup, among other dishes.

Week three will see students try their hands at potato croquettes with sauce and baked potato, leek and olives.

In week four, butternut and spinach filo pie and Moroccan lamb with sweet potato and raisins are among the dishes students learn to make.

Carter said August would also bring with it a two-week baking programme during which students would learn how to bake cakes, biscuits, quiche and pies. The course will also cover different aspects of basic baking theory.

Carter also advised that registration for a 12-week catering and hospitality course had begun.

The basic cooking course begins on 1 August at Parkhurst Recreation Centre, corner of 13th Street and 5th Avenue, at 9am.
