Discover the magic of Moroccan cooking

JOBURG - Discover the magic and mystery of Moroccan cuisine at a cooking class to be hosted by Ancient Secrets.

Moroccan cooking is a melting pot of history, and features Berber, Roman, Arabic, Jewish and French influences.

Ancient Secrets’ Ishvara Dhyan said that Moroccan cuisine was known for its use of ingredients like saffron, dates, honey, parsley, cinnamon, paprika, olives, lemons, ginger, figs, pomegranates, oranges, couscous, quinces, mint, garlic, prunes and raisins.

“Together we will explore this unique way of cooking that has evolved over 3000 years,” he said.

Attendees will cook their way through a traditional menu that includes dishes such as bastilla, a delicately spiced chicken in pastry; kesksu, couscous with almonds and saffron; zahlouk, roasted brinjals with spicy tomatoes; lamb tagine with dates and honey; foul chermoula, fava bean salad with fresh herbs; baghrir, honeycomb pancakes with orange blossom syrup; and an iced watermelon and rose daiquiri cocktail.

The class will take place on 16 March at 4 Bakenbos Crescent, Bloubosrand, Johannesburg, from 10am until 3pm.
