IN THE KITCHEN: Caprese Heirloom Salad

A salad that can be put together in a matter of seconds – literally. Take advantage of the wonderful variations of tomatoes available locally.

A quick, simple and delicious starter to suit all seasons.

Serves two.

Ingredients:

1. 1 yellow tomato, sliced

2. 1 green tomato, sliced

3. 1 red tomato, sliced

4. 1 ball buffalo mozzarella cheese, torn into pieces

5. 2 sprigs fresh basil

6. drizzle of olive oil

7. sea salt and freshly-ground black pepper

Method:

1. Choose pretty serving plates. Layer the exotic tomatoes, starting with a slice of yellow tomato.

2. Top this with a piece of mozzarella cheese.

3. Next, place a slice of green tomato, followed again by mozzarella, and lastly a slice of red tomato on top of the pile. Your stack should sit firmly in place.

4. Top with a sprig of fresh basil.

5. Drizzle over a little olive oil, and season according to taste.
