18 December is National Roast Suckling Pig Day, which is observed annually.
A suckling pig is a young pig – between the age of two and six weeks – which is still fed on its mother’s milk. The pig is roasted whole until the skin is crisp and the meat tender and succulent.
Suckling pigs vary between three and 13kg in mass, and, depending on the market, cost between R160 and R270 per kilogram. These factors, coupled with the daunting task of roasting a whole –even though small – pig, makes the finished product a sought-after delicacy anywhere in the world.
The roasting process is not that difficult if you have the right tools and ingredients and, if you’ve roasted a whole turkey, you can roast a suckling pig too. A home oven will only be able to roast the smallest piglet which will provide approximately 20 adult servings.
