National Bouillabaisse Day is celebrated annually on 14 December, giving seafood lovers everywhere a reason to celebrate.

The French are known for a lot of great recipes and their food inspires people to travel to their country to experience a taste of their authentic dishes – bouillabaisse being one of the ‘must-have’ dishes.

This dish originated in the port city of Marseilles and is a fish stew traditionally made using bony rockfish, saffron, fennel seed and orange zest. The culinary world has strong – and varying – opinions about the proper ingredients for an authentic bouillabaisse, from fish (typically red rascasse, sea robin and European conger) to the wine (red or white). The origins of the dish are also up for debate – was it the creation of a Greek Goddess or simply a stew thrown together by coastal fishermen who used the bony rockfish they were unable to sell to restaurants or markets?

Regardless of your opinion on the right ingredients or origins of this dish, the first step in creating a delicious bouillabaisse is using a variety of fresh fish – especially if you cannot get to the South of France to order it.
