National Lamington Day

Enjoy this delicious snack on #NationalLamingtonDay

21 July is National Lamington Day, a day celebrating one of Australia’s most famous culinary icons – that started off as a kitchen mix-up.

For those of you who don’t know what a lamington is, it is a sweet Australian snack that is cake-based and generally eaten for morning tea, afternoon tea or high tea. But it can be enjoyed anytime during the day as well, it is just that delicious!

Lamingtons are more than a century old and were named after the governor of Queensland, Lord Lamington. It is said that he was having his favourite yellow sponge cake served for his guests, when the maid-servant accidentally dropped the cake into melted chocolate. When his Lordship heard, he was the one who recommended that they roll the cake squares in coconut shavings, to make them less messy for the guests to enjoy with their tea.

There is even an Australian Lamington appreciation society (Alas) which is committed to the preservation of their world famous lamingtons. They celebrate Lamington Day annually.

To celebrate, make some lamingtons for your friends and family, and enjoy them with tea or coffee.
