21 November is National Stuffing Day – a day to celebrate all the various delicious stuffed meats, vegetables, eggs and other food items.

Stuffing – also known as dressing or filling – is a mixture (often starchy) used to fill a cavity in another food item (usually poultry) while cooking. That being said, there are many other foods that are prepared with stuffing such as different meats, vegetables, eggs and so on.

A typical turkey stuffing consists of bread cubes or crumbs combined with onion, celery, salt and pepper, spices and herbs. There are many other varieties of stuffing as well, including the adding of minced meat, sausage, tofu, oysters, egg, rice, apple, raisins and other dried fruits.

The first known stuffing recipes that were documented appeared in Apicius’ De re Coquinaria, a Roman cookbook. Most of the recipes in this book included vegetables, herbs, spices, nuts and spelt (an old variety of wheat) with some of them also including chopped liver and other organ meat.

In addition to stuffing poultry and fish, various cuts of meat are often deboned and have a pouch or slit cut in them and are then stuffed. Some examples of this include pork chops, meatloaf, meatballs, chicken breast, lamb chops and beef tenderloin.

Popular vegetables that are prepared with stuffing, include, but are not limited to, tomatoes, peppers, zucchini and cabbage.
