The sponge cake layers well and is often served with whipped cream and berries.

This cake is believed to have originated in the Caribbean.

The author and poet Gervase Markham’s 1615 book titled The English Housewife, Containing the Inward and Outward Virtues Ought to Be in a Complete Woman is believed to contain the earliest English recipe for sponge cake.
