1. Oxtail is a bony gelatin rich meat and therefore needs to be slow cooked on a steady heat to allow for the meat to fall off the bone.

2. Oxtail can be cooked on a stove top or in a potjie.

3. A perfectly cooked oxtail will take about three hours to prepare, however it is important to check on it every 15 to 30 minutes to ensure even cooking.
