National Carrot Cake Day

3 February is the perfect opportunity to have your cake – and eat your veggies too – as it is National Carrot Cake Day!

Carrot cake closely resembles a quick bread from its preparation to its final consistency. With a quick bread recipe, the dry and wet ingredients are mixed separately before being combined, which results in a coarser product than a traditional cake.

Carrot cake most likely developed from a carrot pudding which could be savoury or sweet. In the Middle Ages, when sugar was hard to find and very expensive, carrots may have been selected as a substitute, because of their natural sweetness.

Carrot cakes may also include spices such as cinnamon, nutmeg, and mixed spices, or nuts and raisins.

To celebrate today find a recipe and bake a carrot cake! Invite your friends and family to enjoy a slice of cake, coffee and some quality time. If you don’t feel like baking your own, invite your friends to your favourite coffee shop and have a slice of carrot cake made by someone else.
