National Sponge Cake Day

23 August is National Sponge Cake Day, a day specially created to recognise the the undeniable classic of the cake world, and ensure it is a guest of honour at your tea table.
The sponge cake is believed to be one of the first cakes that was baked without using yeast, but it is also the trickiest cake for bakers to master. A perfect sponge cake remains moist while standing tall with a fine crumb.
The sponge cake layers well and is often served with whipped cream and berries, and is believed to have originated in the Caribbean.
The author and poet Gervase Markham’s 1615 book titled The English Housewife, is believed to contain the earliest English recipe for sponge cake.
Celebrate today by having some sponge cake with a cup of tea. If you are feeling adventurous, try a new recipe to serve to your friends or family with tea or coffee.
