* 12 Tinkies, each sliced lengthwise in half.

* Cocoa powder for light dusting or finely grated chocolate.

Mascarpone Filling

Ingredients

500g Mascarpone (room temperature), can be substituted by cottage cheese

1½ cups whipping cream

1/3 cup castor sugar

2 tsps vanilla extract

Method

* Soften Mascarpone in a mixing bowl with a spoon.

* Whip cream, sugar and vanilla until soft peaks form.

* Fold it into the Mascarpone.

Espresso Syrup

Ingredients

1/3 cup water

½ cup granulated sugar

2/3 cup strong brewed Espresso coffee or 2 teaspoons of granulated coffee powder dissolved in 2/3 cup of boiled water, cooled

¼ cup dry sherry

Method

Combine water and sugar in a small saucepan.

Bring to a simmer, stirring until sugar is dissolved.

Remove from heat and let cool.

Add coffee and sherry.

To Assemble:

In an oblong glass pie-dish of about 20 x 22cm, place a layer of Tinkies, cream side up.

Drizzle with the coffee syrup.

Spread with Mascarpone mixture.

Repeat layers, ending with the Mascarpone mixture.

Smooth top with spatula.

Cover with plastic wrap refrigerated overnight

Before serving, dust with cocoa or sprinkle with finely grated chocolate.
