Cinnamon cookies to get into the Christmas spirit

As the Christmas spirit begins to get more and more intense, the sight of Christmas food will become the norm with mince pies, fruit cakes and Christmas puddings everywhere you look.

However, instead of going to the store to buy these delicious goods, it’s always a good idea to make them yourself. It’s also a great idea to get the family together to do something fun.

A typical Christmas ingredient is cinnamon. Fragrant and exotic, cinnamon can be used for a wide range of dishes, including sweet and savory. One such delicious treat is cinnamon cookies.

The recipe is easy to follow and relatively quick to make.

Ingredients:

• 1 cup sugar.

• 1/2 cup butter.

• 1 large egg.

• 1 teaspoon vanilla.

• 1 1/2 cups flour.

• 1 1/2 teaspoons cinnamon.

• 1 teaspoon baking powder.

• 1/4 teaspoon salt.

• cinnamon sugar for decoration.

Method:

• In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.

• Combine flour, cinnamon, baking powder and salt.

• Add to butter mixture and blend well.

• Cover and refrigerate two hours or until firm enough to roll into balls.

• Shape dough into small balls.

• Roll in cinnamon sugar to coat.

• Set cookies one inch apart on lightly greased cookie sheets.

• Bake at 350° C for 10 minutes or until the edges are lightly browned.

• Cool slightly on pans, then remove to racks to cool completely.
