#WFD – Homemade Vegetable Soup

Stir in a little cream and garnish with parsley before serving

POLOKWANE – With winter in full swing, staying warm is on most people’s agenda.

One way of staying warm is by cooking warm and hearty food.

Soups are considered a winter favourite among many people and one can make a variety of different flavours.

What’s for Dinner has this wonderful recipe for vegetable soup.

Ingredients

  1. 15ml margarine
  2. 200g onion, sliced
  3. 300g leeks, sliced
  4. 300g carrots, peeled and sliced
  5. 800g potatoes, peeled and cubed
  6. 2 x lt water
  7. 2 x KNORR Vegetable Stock Pot
  8. cream (for garnish)
  9. parsley, chopped (for garnish)

Method

  1. Sauté the onion, leek and carrots in the margarine for 5 minutes
  2. Add the water, KNORR Vegetable Stock pot and the potatoes
  3. Bring to boil then reduce the heat and allow to simmer until vegetables are tender
  4. Puree by pressing through a sieve or using a hand blender or potato masher
  5. Season (to taste) with salt and pepper.
