#WFD – Baked Sweet Potatoes with Garlic and Chilli

Halve each potato lengthways and top with a round of garlic and chilli.

POLOKWANE – Instead of baking a normal potato to accompany your meal tonight, try a sweet potato instead.

Sweet potatoes don’t have to take a long time to prepare. Cutting them into slices and Quick Steaming them for just 7 minutes not only brings out their great flavor but helps to maximize their nutritional value. And you can add cinnamon, nutmeg, and/or cloves for extra flavor and nutrition.

Ingredients

  1. 15ml finely flatleaf parsley, chopped
  2. 1 x small red chilli, deseeded and finely chopped
  3. 30ml olive oil
  4. 3 x small sweet potatoes
  5. 1 x KNORR Creamy Garlic
  6. 125g stork margarine, softened

Method

  1. Preheat oven to 200°C.
  2. For garlic and chilli log, mix chilli, parsley, Stork margarine and KNORR Creamy Garlic Sauce until smooth and form into a long log shape, wrap in plastic wrap and refrigerate.
  3. Wrap each potato in foil and bake for 30 minutes, then open foil and bake for a further 10 minutes until cooked through.
  4. To serve, slice garlic and chilli log into 1 cm rounds.
