Lemon-Buttermilk Pound cake: a prefect tea time treat for the lemon-lovers

POLOKWANE – This is the perfect treat for the lemon-lovers out there. It’s zesty flavour and tangy topping makes it an all-time winner.

Ingredients needed:
3 ¼ cups cake flour or all-purpose
1 teaspoon baking powder
¼ teaspoon salt
1 ½ cups sugar
1 cup butter/margarine
4 eggs
1 ¼ cups buttermilk (Lacto/sour milk)
2 teaspoons fresh lemon juice or essence
Method:
Preheat oven to 325 (160) degrees. Grease and lightly dust baking pan, preferably loaf or bundt pan.
Sift flour, baking powder and salt together.
In a separate bowl, cream butter and sugar. Add eggs one at a time and beat well.
Add lemon flavour.
Alternately add flour mixture and buttermilk until combined.
Bake for about 1 hour 20 minutes our until inserted toothpick/tester comes out clean.
Cool cake in pan for about 10 minutes, remove from pan and cool completely on wire rack before decorating.
