#WFD – Baked Potatoes with Creamed Spinach and Feta

POLOKWANE – The beauty of potatoes is that there are so many ways to cook them.

Whether it be baked, fried or mashed, they’re delicious any way.

What’s for Dinner says the next time you’re looking for a quick family dinner, try these baked potatoes stuffed with spinach and feta and serve with meat and greens.

Ingredients

  1. 4 medium potatoes
  2. 15ml oil
  3. 1 clove garlic, crushed
  4. onion, chopped
  5. 500g baby spinach leaves
  6. 1 pinch nutmeg
  7. 1 x KNORR Classic White Sauce
  8. 250ml boiling milk
  9. 200g feta cheese
  10. 1 pinch salt and black pepper (to taste)
  11. 200ml cheddar cheese, grated
  12. 1 pinch paprika

Method

  1. Boil potatoes in boiling, salted water until cooked though.
  2. Cut in half and scoop out the tender flesh of the potato and set aside, leaving a cavity to stuff.
  3. To make the filling: Heat oil in a frying pan and sauté the garlic and onion.
  4. Add spinach and a pinch of nutmeg and continue to fry until heated through.
  5. Empty sachet contents into a jug.
  6. Fill up to 250 ml mark with boiling milk.
  7. Stir with a fork for a minute until thick and smooth.
  8. Add sauce to the spinach mix a little at a time until a nice consistency is reached.
  9. Add potato flesh, crumbled feta cheese, salt and black pepper.
  10. Fill the potatoes and top with grated cheese and a sprinkling of paprika.
  11. Place under the grill for 10 min until the cheese is bubbling and golden brown.
