POLOKWANE – Cottage pie will always be a classic dish enjoyed by many.

What’s for Dinner says this is a classic dish with a South African twist – sweet potato is a firm favourite and a versatile vegetable, ideal for a number of dinner ideas.

Ingredients

  1. 30ml worcester sauce
  2. 250ml water
  3. 1 tin tomatoes, chopped
  4. 1 punnet button mushrooms, sliced
  5. 400g beef mince
  6. 1 clove garlic, crushed
  7. 1 onion, finely chopped
  8. 15ml olive oil
  9. 30ml margarine
  10. 1 x KNORR Savoury Mince Dry Cook-in-Sauce
  11. 800g sweet potatoes
  12. 400g potatoes

Method

  1. Preheat oven to 200°C.
  2. Wrap the potatoes in tin foil and bake in the oven for 45 minutes or in the microwave until cooked through.
  3. In the mean time heat oil in a pan and fry onion and garlic until tender.
  4. Add beef mince and fry until well browned.
  5. Add button mushrooms and fry for another 5 minutes or until soft.
  6. Stir in chopped tomatoes, KNORR Savoury Mince Dry Cook-in-Sauce, water and Worcester sauce and allow to simmer for 20 minutes.
  7. When potatoes are cooked unwrap, remove skins and mash with margarine until smooth.
  8. Transfer mince to an ovenproof casserole dish, top with mashed potato and place in the oven for 30 minutes or until the topping is golden brown.
