#WFD – Mac ‘n Cheese with Cajun-Spiced Chicken

Stir in the Cajun chicken and serve garnished with spring onions.

POLOKWANE – Mac and Cheese is a classic dish loved by many.

In a tale old recipe, the dish can be spruced up by adding different flavour combinations.

What’s for Dinner suggests adding cajun spice to this dish.

Ingredients

  1. 1 tbsp margarine to fry
  2. 300g chicken breasts, sliced
  3. 15ml cajun seasoning
  4. 2ml garlic, crushed
  5. ½ green pepper, diced
  6. ½ red pepper, diced
  7. 15ml lemon juice
  8. 1 x KNORR Macaroni and Cheese Pasta and Sauce
  9. 125ml milk
  10. 310ml water
  11. 50ml stork margarine

Method

  1. In a large frying pan, heat Stork margarine over a medium high heat, add chicken and Cajun seasoning and fry until the chicken is brown.
  2. Add garlic and peppers and fry until they have softened.
  3. Add lemon juice and set aside.
  4. In a medium saucepan, bring milk, water and margarine to the boil.
  5. Add uncooked pasta and contents of the sauce sachet and stir continuously until boiling.
  6. Simmer for 8-10 min on medium heat, stirring occasionally.
  7. Stir in the Cajun chicken and serve garnished with spring onions.
