#WFD – Creamy Chicken Stew

Serve this delicious dish with rice or couscous.

POLOKWANE – This delicious pasta recipe by What’s for Dinner  will take you around half an hour to prep and around 55 minutes to cook.

Ingredients

  1. 45ml sunflower oil
  2. 1 large onion, sliced
  3. 250g button mushrooms, halved
  4. 1 red pepper, sliced
  5. 6 chicken breast fillets, cubed
  6. 2 cups water
  7. 45ml dry white wine (optional)
  8. 1 cup cream
  9. 15ml fresh parsley, chopped
  10. 60ml KNORR Chakalaka Soup

Method

  1. In a large pot, heat oil and add onion, red pepper and button mushrooms. Cook until soft, then remove and set aside.
  2. Fry chicken until lightly browned.
  3. Return vegetable mixture to the chicken.
  4. Add water and wine, if using, and simmer for 20 minutes.
  5. Add cream and parsley, season and simmer for a further 5 minutes.
  6. Mix the KNORR Chakalaka Soup with a little water to form a smooth paste and stir into the stew. Simmer for 5 minutes to thicken.
  7. Serve with rice.
