#WFD – Golden Chicken Strips with Tomato and Mozzarella

Bake for 30 minutes, until bubbling and cheese is golden.

POLOKWANE – Finding a delicious meal that the whole family can enjoy can be a tiring task, but, when you do find that one recipe, it’ll be hard to get rid of.

What’s for Dinner suggests treating your famiky to home-made crispy chicken in the comfort of your own kitchen.

Ingredients

  1. 15ml basil, chopped
  2. 20ml parsley, chopped
  3. 1 cup fresh breadcrumbs
  4. 2 eggs, lightly beaten
  5. 600g chicken strips
  6. 1 x KNORR Classic White Sauce
  7. 60ml olive oil
  8. 1 tin tomato and onion mix
  9. 1 cup mozzarella, grated

Method

  1. Preheat oven to 200°C.
  2. Lightly grease a shallow ovenproof dish.
  3. Toss chicken in KNORR Classic White Sauce, shaking off excess.
  4. Dip in egg and coat in combined breadcrumbs and herbs.
  5. Fry in oil on a medium heat.
  6. Cook chicken in batches for 1-2 minutes each side, until browned.
  7. Pour one tin of tomato & onion mix over the bottom of the dish and top with half of chicken, and half the mozzarella.
  8. Repeat layers and season.
  9. Bake for 30 minutes, until bubbling and cheese is golden.
  10. Serve with green salad.
