Spoil Dad with a knock-out Father’s Day breakfast

Between cheesy-bacon filled breakfast burgers, scrumptious eggs in a bun and a savoury brunch bake, there's something your dad will love.

POLOKWANE – Celebrate Dad with a crazy-good breakfast anybody can make. Between cheesy-bacon filled breakfast burgers, scrumptious eggs in a bun and a savoury brunch bake, there’s something your dad will love.

It can of course be followed up by desert – who said one can only have desert after lunch or dinner? Here are some ideas for a lovely brekkie:

1) French toast with bacon, egg and maple syrup

It may just be the breakfast to make your dad feel super special this Father’s Day. Serve with a cup of coffee to get his day started right!

2) Try something different this Father’s Day and make pizza for breakfast

A pizza base loaded with bacon and scrambled eggs may be a whole new pizza experience. Or just try it with bacon, egg and bananas! Wash it down with fresh fruit juice.

3) Hamburgers for breakfast (or brunch) is a super idea

Here are a couple of ideas: (use pre-prepared hamburger patties and cook it, or make your own. (Boerewors filling make a tasty patty, pressed together).

You may also need salt, freshly ground black pepper, slices of cheddar cheese, hamburger buns, thinly sliced tomatoes, thinly sliced red onion, butter or Iceburg lettuce, tomato sauce, mustard and mayonnaise.

Heat grill or grill pan to high. Grill patties until crust develops and they’re no longer pink, 6 minutes per side for medium. If using cheese, top on patties 2 to 3 minutes before burger is finished cooking. Place patties on buns and top with preferred toppings before serving with coffee.

4) Hamburger with egg and bacon

You will need: 4 hamburger patties, salt, freshly ground black pepper, 4 slices cheddar or American cheese, 4 large eggs, 8 slices bacon, 4 hamburger buns, tamato sauce (ketchup) or hot sauce, for drizzling.

Heat grill or grill pan to high. Season burger patties with salt and pepper and grill 6 minutes per side for medium. Add cheese and let melt, 1 minute.

Over medium heat, fry eggs until whites are set and yolks are still a bit runny, 4 minutes, season with salt and pepper. Transfer eggs to a plate and add bacon to skillet. Cook until crispy, 6 minutes, then transfer to a paper towel-lined plate to drain.

Assemble burgers: Top bun bottoms with 2 slices bacon, a patty, and a fried egg and drizzle with ketchup or hot sauce. Add top buns and serve.

5) Brunch bake

Eight servings, 20 minutes to prepare, total preparation and cooking: 1 hour 20 minutes

Ingredients:

1 tbsp. butter

500g – 750g ground Italian sausage

10 large eggs

2 cups whole milk or cream

Salt and freshly ground black pepper

4 cups cubed bread

1 1/2 cups shredded cheese

1 cup frozen spinach, defrosted, drained, and chopped

1 cup sliced mushrooms

1 cup halved cherry tomatoes

1/4 cup torn basil, for garnish

Directions:

Preheat oven to 350° and grease a 20cm x26cm baking dish with butter. In a large skillet over medium-high heat, add sausage and cook, breaking up large pieces with a spoon, until golden, about 7 minutes. Remove from heat and let cool.

In a large bowl, whisk together eggs and milk and season with salt and pepper. Gently fold in bread, 1 cup cheese, spinach, mushrooms and tomatoes.

Pour mixture into prepared baking dish. Top with remaining 1/2 cup cheese and bake 50 to 55 minutes, until cheese is golden and no liquid remains. Garnish with basil before serving.

6) Bacon ‘n egg cups

Ingredients:

12 slices bacon

10 large eggs

1/4 cup sour cream

1/2 cup shredded Cheddar

1/2 cup shredded mozzarella

2 jalapeños, 1 minced and 1 thinly sliced OR replace with a ¾ cup of chives, parsley or shredded basil

1 tsp. garlic powder

Salt and freshly ground black pepper

Nonstick cooking spray

Directions:

Preheat oven to 375°.

In a large skillet over medium heat, cook bacon until slightly browned but still pliable. Set aside on a paper towel-lined plate to

drain.

In a large bowl, whisk together eggs, sour cream, cheeses, minced jalapeño (or chives) and garlic powder. Season with salt and pepper.

Using non-stick cooking spray, grease a muffin tin. Line each well with one slice of bacon, then pour egg mixture into each muffin cup

until about two-thirds of the way to the top. Top each muffin with a jalapeño slice or more chives or parsley.

Bake for 20 minutes, or until the eggs no longer look wet. Cool slightly before removing from the muffin tin. Serve.

7) Egg in a bun

Ingredients:

12 Slider buns

6 slices bacon, cooked

1 cup white cheddar, shredded

12 eggs

2 tbsp. chives, chopped

Salt and freshly cracked pepper

Directions:

Preheat oven to 350°F.

Place slider buns in a baking pan. Using a paring knife, cut wells out of slider buns. Cut bacon slices in half crosswise, then lay a strip

of bacon inside each bun, folding the bacon strip over the edges of the well. Sprinkle with cheddar then carefully crack an egg into each well. (Depending on the size of your slider buns, you may need to use less white.) Season with salt, pepper and chives. Bake for 10-12 minutes, until the eggs are cooked through.
