#WFD – Rocket & Hake Phyllo Parcels

Serve this dish with the remaining sauce and a fresh salad.

POLOKWANE – There are many ways to make fish more exciting to eat by combining it with different ingredients and spices.

Hake is one of the most popular fishes to eat and is the core ingredient of many famous dishes such as Fish and Chips.

This recipe includes hake firmly wrapped in phyllo pastry which should be cooked till golden brown and flaky.

Ingredients

  1. 0.5 x packet rocket
  2. 10ml margarine
  3. 15ml lemon juice
  4. 8 x phyllo pastry sheets
  5. 15ml sesame seeds
  6. 1 x KNORR Classic White Sauce (prepared as per instructions)
  7. olive oil (to brush)
  8. 4 x hake fillets

Method

  1. Preheat oven to 200°C.
  2. Prepare sachet of KNORR Classic White Sauce as per instructions then stir in the lemon juice and margarine to combine.
  3. Take a sheet of pastry and place onto a board, brush with a little oil and cover with a second sheet.
  4. Place a pile of rocket onto pastry edge nearest you and place the fish fillet on top.
  5. Spoon over 2-3 tbsp of sauce.
  6. Starting at the edge closest to you, roll fish in pastry, making sure the filling is enclosed completely.
  7. Then fold in the pastry sides and continue to roll up like a sausage.
  8. Place parcels on a baking tray and brush with a little olive oil, and sprinkle with sesame seeds.
  9. Bake in a preheated 200°C oven for 15-20 minutes or until golden.
