#WFD – Baked fish with parmesan and basil crumb topping

Bake for 20 to 30 minutes or until fish is cooked through.

POLOKWANE – Fish is widely considered one of the healthiest meats but baking it increases its nutritional value.

What’s for Dinner says fish recipes don’t get any tastier than this! Baked Fish with a Parmesan and Basil Crumb Topping is certain to be a hit at the dinner table.

Ingredients

  1. 2 slices white bread
  2. 60ml basil leaves
  3. 30ml olive oil
  4. 20g parmesan cheese, grated
  5. 1 x KNORR Spaghetti Bolognaise Dry Cook-in-Sauce
  6. 250ml boiling water
  7. 4 hake fillets, skinned and bones removed
  8. 1 head broccoli, steamed to serve

Method

  1. Preheat oven to 180°C.
  2. Lightly grease a 24cm square baking dish.
  3. Place bread in a food processor and process until roughly chopped.
  4. Add basil and oil.
  5. Process to a fine breadcrumb mixture.
  6. Transfer mixture to a bowl.
  7. Stir in the Parmesan.
  8. Season fish with salt and pepper.
  9. Place, in a single layer, in the prepared baking dish.
  10. Mix contents of sachet of KNORR Spaghetti bolognaise Dry Cook-in-Sauce with boiling water and mix until smooth then pour over the fish.
  11. Sprinkle the breadcrumb mixture over the fish.
  12. Bake for 20 to 30 minutes or until fish is cooked through.
  13. Serve with steamed broccoli.
