#WFD – Spiced tomato chicken and rice tray bake

Remove from the oven and top with baby spinach leaves and serve

POLOKWANE – Making dinner is usually a case of finding something quick and delicious to make. This recipe by What’s for Dinner is a meal in one and will have the family asking for more.

Ingredients

  1. 1 small onion, finely chopped
  2. 5ml crushed garlic
  3. 30ml margarine
  4. 1 cup brown rice
  5. 750ml hot water
  6. 1 x KNORR Naturally Tasty Chilli Con Carne Recipe Mix
  7. Robertsons Chicken Spice
  8. 1.2kg chicken drumsticks
  9. 1 large handful baby spinach leaves

Method

  1. Preheat oven to 180 C
  2. Scatter the onion and garlic on the base of an oven tray and place small knobs of margarine randomly on the base
  3. Pour the rice on top of the onion and spread out to make an even layer
  4. In a bowl mix together the water and the contents of the sachet of KNORR Naturally Tasty Chilli Con Carne to combine
  5. Pour this mixture over the rice
  6. Generously season the chicken drumsticks with chicken spice and arrange them on top of the rice
  7. Cover with tin foil and bake in the oven for 40 minutes then remove the foil and bake for a further 25 minutes or until the rice is tender
  8. Remove from the oven and top with baby spinach leaves and serve
