Try Chef Radi’s Roast chicken recipe tonight

Self taught chef, Pontsho Chef Radi Mamabolo says that he finds his comfort both in the kitchen and in the garage, because why?

POLOKWANE – “I love my cars just as much as I love good food. For me, a good meal has the ability to bring people together, uniting them and deepening bonds as loved ones share a meal. I often cook for my friends during our regular chill out sessions, over the weekends or when we are off from work. Cooking is and has always been my passion and I will enjoy it above all else. I call these chill out sessions, Chaf Radi’s cookout sessions where I share my mouth watering cooked-with-love-dishes with friends and family,” he explained.

He gave REVIEW readers a delicious Roast Chicken Recipe from #ChefRadiKitchen to try out.

For the roast chicken you will need:

Ingredients:

• 5ml Cayenne pepper

• 15ml Crushed Garlic

• 15ml Paprika

• 15ml Ground Black Pepper

• 15ml Worcester Sauce

• 30ml Virgin Olive Oil

• 45ml Sweet Chili Sauce

• 5ml Pink Himalayan Salt

• Chive

• Parsley

• Potatoes

Method:

Step 1

• Pre-heat the stove at 190°C for 5 minutes while washing you whole chicken under running water, removing excess fats and blood

• Pat dry your chicken with paper towel to remove excess water

• Mix all your ingredients in a bowl and whisk to consistency

• Then Rub your mixture (sauce) over the chicken, inside and under the skin, for that even scrumptious tang

• Then place your flavored chicken inside a roasting pan, and sprinkle with fresh Chive and Parsley for the sensational fresh aroma

• Deep your potatoes in the sauce and put them in the roasting pan

• Then add ½ a cup of water into the roasting pan

Step 2

• Roast your chicken for 20 minutes at 230 °C, then lower the temperature to 180°C and continue roasting for about another 40 minutes

• Baste the bird every 10-15 minutes with the juices from the roasting pan for a moist, flavorful taste.

• Then after an hour, remove the chicken from the oven and allow it to set/rest for about 10-15 minutes before serving

Best served with Pap, Samp, Rice or Rolls
