Vanilla Cake Pops:

Ingredients

• 450g ready made vanilla sponge cake.

• 50g apricot jam

• 70g icing sugar

• 1/2 vanila extract

Decoration:

• 225g dairy milk chocolate roughly chopped

• 20 lolly sticks or kebabs sticks

• 150g icing sugar

• Pink food colouring

• 4 tsp of cold water

• Sweet sprinkles

Method:

• Crumble the sponge cake into mixing bowl. Add the apricot jam, icing sugar and vanilla extract and mix together until it sticks together. Scoop with a tbsp and roll into a ball shape.

• Chill in a freezer for 1 hour.

• Put the chocolate in a heat proof bowl, set the bowl over a pot of simmering water and heat until melted. Remove from the heat.

• Push in a stick in each cake pop and deep into the chocolate until coated. Lift it from bowl letting the excess chocolate drip back into the bowl.

• Place in a cup and chill till the chocolate is set.

• Put the icing sugar in a bowl and beat in a dash of pink food colouring and water until smooth.

• Spoon it on a cake pop and give it shape using the back of a spoon. If too firm add little more water.

• Sprinkle the sweet sprinkles on top of the icing.
