#WFD – Moroccan Spiced Butternut & Lentil Veggie Burgers

What’s for Dinner says these super-tasty vegetarian burgers are packed with lentils, beans, squash and plenty of aromatic Moroccan flavours. Serve on toasty buns for a memorable Meat-Free feast.
Ingredients
For the Burger Patties:
- 2 garlic cloves, finely chopped
Method
- Grind the oats in a food processor to obtain a coarsely ground oat flour. Set aside.
- Tip the lentils and beans into a sieve set over the sink and press down firmly with a kitchen towel to remove all the moisture. Set aside.
- Heat the olive oil in a pan add the onion and cook until golden brown. Set aside.
- In a large bowl, mix together the cooked onion, 50 g ground oats, lentils, kidney beans, butternut, egg, garlic, and spices.
- Add the contents of the sachet of KNORR Naturally Tasty Moroccan Chicken Recipe Mix.
- Crush the mixture with a fork until well combined and smooth.
- To make the burger patties, divide the mixture into 6 equal portions and shape into patties. If the texture is too wet, add a little more oat flour to the mixture. Sprinkle the patties with oat flour on both sides.
- Heat 15ml olive oil in a large pan over medium heat and cook the patties on each side for 4 to 5 minutes. Cover the patties with a lid while they’re cooking.
- TIP: If you cook the patties in batches, make sure there is about a tablespoon of oil in the pan every time you start a new batch.
- When all the patties are cooked, toast the burger buns, add the patties and top with lettuce, tomato and red onion rings.
- Combine the parsley and chives with the mayonnaise and serve with the burgers.
