#WFD – Beef and Red Pepper Stew

Allow it all to simmer for 5 minutes, stirring continuously, until it’s thick

POLOKWANE – Stew’s are not only hearty and delicious but they’re also perfect for a chilly winter’s night.

What’s for Dinner suggests serving this dish with rice or sadza.

Ingredients

  1. 30ml cooking oil
  2. 1 onion, chopped
  3. 2 cloves crushed garlic
  4. 1 red pepper, sliced
  5. 15ml Rajah Mild & Spicy Curry Powder
  6. 400g beef cubes
  7. 1 tin peeled and chopped tomatoes
  8. 2 potatoes, peeled and cubed
  9. 250ml water
  10. 1 Knorrox Beef Stock Cube
  11. 30ml KNORR Minestrone Soup
  12. 10ml Robertsons Mixed Herbs
  13. 60ml water

Method

  1. Heat oil in a pot and fry the onion, garlic and red pepper until soft
  2. Add the Rajah Mild & Spicy Curry Powder and fry for 1 minute to release the flavour and aroma
  3. Add the beef cubes and fry until well browned
  4. Add the tinned tomatoes, potatoes, water and Knorrox Beef Stock Cube
  5. Stir well and bring to the boil
  6. Turn down the heat and allow it all to simmer for 30 minutes with the lid on, stirring occasionally until the beef is tender and the potatoes are soft
  7. Just before your Stew’s done, mix the Knorr Minestrone Soup with 4 tablespoons of water to make a smooth paste, and add it to the pot
  8. Allow it all to simmer for 5 minutes, stirring continuously, until it’s thick
  9. Serve with rice or sadza
