Enjoy banting pizza at home with this delicious recipe

Banting expert, Bongiwe Bee Shelembe, shares this scrumptious and healthy, Zucchini pizza recipe with Review

POLOKWANE – Banting is a low-carbohydrate, high-fat diet, named after William Banting, the first person to do it. It’s been made popular by Professor Tim Noakes in his book The Real Meal Revolution and the idea is that this way of eating makes your body switch from burning carbs for energy to burning fat.

But just because the word diet comes up, doesn’t mean you can’t eat delicious things. With Banting, you can.

What you will need:

• A bowl and wooden spoon to mix.

• Flat baking tray.

• 1 pack of Zucchini.

• 2 large eggs.

• Half grated mozzarella cheese.

• Seasoning.

• Baking paper.

• Banting mayo (ask the store assistants if you do not know it).

• Minced meat.

• Tomato.

• Mushrooms.

How to make it:

• Heat the oven to 180 degrees.

• Cook mince with some olive oil half way.

• Grate 1 pack of zucchini and add half a cup of  grated mozzarella cheese into the same bowl.

• Add 2 raw eggs and some seasoning of your choice.

• Mix all the ingredients together, including the mince and pour the mixture out and flatten it out on a lined baking tray.

• Top it off with more grated mozzarella cheese.

• Bake the mixture till it’s golden brown.

• When the pizza is almost done, take it out, coat the pizza with some banting mayo and mushrooms (depending on how much you want to add), add another cup of mozzarella to cover the mince and also add some diced raw tomato.

• Place it back in the oven until the cheese starts melting.

Enjoy a healthy and slimming pizza.
