Healthy apple dishes just in time for spring

POLOKWANE – Springtime is around the corner and everyone is trying to get in shape by eating healthy.

Bolivia Lodge’s chefs, Nuriah Hamese and Davis Sebopa have created delicious and healthy meals with apples as the main ingredient.

For starters, they made a ham and apple wrap with dip:

Ingredients:

• 1 granny smith apple (cut into 16 equal size wedges)

• 113g cheddar cheese (cut into blocks)

• 113g deli ham (cut lengthwise)

“You wrap the ham around the apple and cheese and enjoy with a dip. You can make your own dip as well with a quarter cup plain low-fat yoghurt and two teaspoons of dijon mustard. Very delicious healthy for children, instead of sweets,” says Hamese.

For the main course, they prepared pork with blackberries and apples:

Ingredients:

• 1 teaspoon vegetable oil

• 450g pork fillet, trimmed and thinly sliced

• 150ml unsweetened apple juice

• 150ml chicken stock

• 1 tablespoon chopped fresh sage

• Salt and freshly ground pepper

• 2 granny smith apples, sliced

• 150g blackberries

• 2 teaspoon corn flour

“Boil the meat until soft and add chicken stock, apple juice, fresh sage, salt and pepper and corn flour until brown and sauce is thick.

“Once cooked, remove from pot and add blackberries and sliced apples.

“The meat can be enjoyed with baked potatoes or rice,” says Sebopa.
