POLOKWANE – If you’re a seafood lover, this dish will have you asking for more.
What’s for Dinner describes this dish as mussels simmered with garlic and lemon juice in a deliciously spicy tomato sauce to make a seafood hotpot with a difference.
Ingredients
- 15ml olive oil
- 1 onion, diced
- 1 red pepper, chopped
- 1kg mussels
- 15ml Robertsons Spice For Fish
- 30ml crushed garlic
- 30ml lemon juice
- 15ml Robertsons Paprika
- salt and freshly ground black pepper
- 30ml Robertsons Barbecue Spice
- 1 x 400g can chopped tomatoes
- 15ml Robertsons Crushed Chillies
- 1 x KNORR Naturally Tasty Tuna Napolitana
- 250ml water
- 250ml frozen mixed vegetables
Method
- Heat the oil in a large pot and add the onion and red pepper. Fry until soft.
- Add the mussels, Spice For Fish, garlic, lemon juice and paprika, and season to taste with salt and black pepper.
- Add the Barbecue Spice and stir together for 3 minutes.
- Add the can of tomatoes, the crushed chillies and the contents of the sachet of KNORR Naturally Tasty Tuna Napolitana, and mix well.
- Stir in the water, lower the heat and cook for another 30 minutes, stirring occasionally.
- Add the mixed vegetables and simmer for another 15 minutes.
- Serve hot with pasta or bread.
