#WFD – Home-Made Vegetable Soup

Stir in a little cream and garnish with parsley before serving

POLOKWANE – On a cold winter’s evening, all you’re looking for is comfort and what better way to get it than with a delicious bowl of soup.

What’s for Dinner says this is a healthy, homemade vegetable soup that requires minimal ingredients, the perfect month-end meal.

Ingredients

  1. 15ml margarine
  2. 200g onion, sliced
  3. 300g leeks, sliced
  4. 300g carrots, peeled and sliced
  5. 800g potatoes, peeled and cubed
  6. 2 lt water
  7. 2 x KNORR Vegetable Stock Pot
  8. cream (for garnish)
  9. parsley, chopped (for garnish)

Method

  1. Sauté the onion, leek and carrots in the margarine for 5 minutes
  2. Add the water, KNORR Vegetable Stock pot and the potatoes
  3. Bring to boil then reduce the heat and allow to simmer until vegetables are tender
  4. Puree by pressing through a sieve or using a hand blender or potato masher
  5. Season (to taste) with salt and pepper
  6. Stir in a little cream and garnish with parsley before serving
